
Ingredients:
-Couscous Quina Medley OR
-Couscous
-Quinoa
-Green Onion
-Kalamata Olive (I leave it out but this is the OG)
-White Onion
-Red Pepper
-Cucumber
-Garlic
-Sheeps Milk Cheese OR Feta (container)
-Olive Oil
-Lemon Juice from 1 Lemon
-Red Wine Vinegar
-Salt & Pepper
-Chicken Stock
Directions:
1) Bring 1.5/1.75 cups of chicken broth to boil
2) Add ½ cup cous cous, ½ cup quinoa
3) Cook for about 12-15 minutes or until broth is soaked up and it tastes good
** WHILE THIS COOKS**
4) Chop everything up- (I use about 1 of everything and add in half of everything first then will add more if I think it needs more.)
**AFTER COUSCOUS QUINOA IS FINISHED**
5) Put into a big bowl and chill in fridge for 30 minutes
6) After chilled, add all veggies, some olive oil, some vinegar, and salt & pepper. Mix with fork to break up cous cous.
7) ENJOY!
My best friend made this and I had to copy & share. It tastes so fresh and delicious. I usually use this for lunches for about a week. It makes a lot! This would be perfect for a side dish at a party or just to have in the fridge for the week.
